  • 11 ounces phyllo dough
  • 2 pounds fresh spinach (or frozen)
  • 2 tablespoons olive oil
  • 3 green onions
  • 1 leek
  • ½ cup parsley
  • ¼ cup dill
  • ¼ cup mint
  • 1 pound feta cheese
  • 2 large eggs
  • Salt and black pepper

Instructions

  1. Sauté the chopped leek and green onions in olive oil until soft. Add spinach, salt, and pepper; cook until moisture evaporates.
  2. Transfer greens to a bowl to cool slightly. Stir in crumbled feta, beaten eggs, parsley, dill, and mint until well combined.
  3. Grease a baking pan; layer eight sheets of phyllo dough with olive oil between each sheet. Spread the spinach filling evenly over the layers.
  4. Top with another eight sheets of phyllo dough, again layering with olive oil. Fold over excess dough to create a rim and brush the top with more oil. Cut into squares.
  5. Bake at 340°F (170°C) for about one hour until golden brown.
