  • 3 teaspoons vanilla paste (or extract)
  • 1 teaspoon cinnamon
  • 1 teaspoon pumpkin pie spice (or cinnamon)
  • 1/3 cup brown sugar
  • 3 1/4 cups powdered sugar

Instructions

  1. In a mixing bowl, cream together softened vegan butter, pumpkin puree, brown sugar, granulated sugar, and vanilla until light and fluffy.
  2. In another bowl, whisk together flour, baking powder, pumpkin pie spice, cornstarch, and salt.
  3. Gradually combine the dry ingredients with the wet mixture until just mixed.
  4. Chill the dough for at least 30 minutes in the refrigerator.
  5. Preheat your oven to 350°F (177°C).
  6. Scoop out dough and shape into disks on a parchment-lined baking sheet.
  7. Bake for 10–12 minutes; allow cooling completely before frosting.
  8. Prepare the cinnamon frosting by whipping together all ingredients until smooth and pipe onto cooled cookies.
