  • 1 cup cherry tomatoes, halved

  • Salt & freshly ground black pepper, to taste
  • Extra virgin olive oil (optional)

Instructions

  1. Cook the eggs in boiling water for 7 minutes for jammy yolks or 9 minutes for fully set yolks. Transfer them to an ice water bath to cool before peeling.
  2. Slice the avocado and arrange it on one side of a shallow bowl.
  3. Halve the cherry tomatoes and toss them with chopped herbs, salt, and pepper.
  4. Place the sliced eggs, avocado, and seasoned tomatoes in the bowl. Top with sesame seeds and drizzle with extra virgin olive oil if desired.
