  • 1 large bone-in lamb shoulder (about 4.5 lbs)
  • 6 cloves garlic, halved
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh oregano, chopped
  • 1 tablespoon coarse sea salt
  • 1 teaspoon black pepper
  • Optional: 2 large onions for caramelizing

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Place the lamb shoulder in a large roasting pan and rub it with salt and pepper.
  3. Scatter halved garlic cloves around the lamb and sprinkle with chopped herbs.
  4. Cover with aluminum foil and roast for about 4 hours until tender; remove foil during the last hour.
  5. For optional caramelized onions, sauté sliced onions in olive oil until golden brown while the lamb roasts.
