  • 1 large onion, sliced
  • 3 carrots, chopped
  • 1 can chickpeas, drained
  • 1 cup dried apricots
  • 2 cups chicken broth
  • 2 tbsp ras el hanout spice mix
  • 1 tsp ground cumin
  • 1 tsp ground cinnamon
  • 1 tbsp tomato paste
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh cilantro or parsley for garnish

Instructions

  1. Mix ras el hanout, cumin, cinnamon, salt, and pepper with olive oil to create a spice paste.
