  • 4 garlic cloves, minced
  • 1 tbsp ginger, grated
  • 1 tbsp curry powder
  • 1 tsp ground cumin
  • 1 tsp turmeric
  • 1 tsp paprika
  • 1/2 tsp chili powder (optional)
  • 1 can (14 oz) coconut milk
  • 1 can (14 oz) diced tomatoes
  • 1/2 cup beef broth
  • 1 tbsp tomato paste
  • Salt and pepper to taste
  • 2 tbsp oil (for browning)

Instructions

  1. Heat oil in a heavy-bottomed pot over medium-high heat. Brown the beef cubes on all sides for about 5-7 minutes; remove and set aside.
  2. In the same pot, sauté diced onion until translucent. Add minced garlic and grated ginger; cook for 2 minutes until fragrant.
  3. Add curry powder, cumin, turmeric, paprika, and optional chili powder; stir well for one minute.
  4. Return browned beef to the pot. Pour in coconut milk, diced tomatoes, and beef broth; mix everything together.
  5. Bring to a gentle simmer and cover. Cook on low heat for 3-4 hours until beef is tender.
  6. Adjust seasoning if necessary and serve hot with freshly made garlic naan.
