  • 2 lbs beef chuck or stew meat, cut into cubes
  • Salt and black pepper, to taste
  • 2 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 teaspoons curry powder
  • 1 teaspoon garam masala
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 can (13.5 oz) coconut milk

Instructions

  1. Season beef cubes with salt and black pepper. In a large skillet over medium heat, add vegetable oil and brown the beef on all sides. Remove from heat.
  2. In the same skillet, sauté onions, garlic, and ginger until onions are translucent. Add curry powder, garam masala, cumin, paprika, and cayenne (if using) for one more minute.
  3. Transfer the browned beef and sautéed mixture into the slow cooker and mix well.
  4. Cook on low heat for 6 to 8 hours until beef is tender. Stir in coconut milk during the last hour of cooking.
