  • 2 lbs beef chuck (cut into cubes)
  • 1 tablespoon coconut oil
  • 1 large onion (diced)
  • 4 garlic cloves (minced)
  • 1 tablespoon fresh ginger (grated)
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon chili flakes (optional)
  • 14 oz can full-fat coconut milk
  • 14 oz can crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 tablespoon brown sugar
  • 1 tablespoon lime juice
  • Salt and pepper to taste

Instructions

  1. Prepare all ingredients by cutting beef into cubes and dicing the onion.
  2. In a skillet over medium heat, sauté onion in coconut oil until translucent. Add garlic and ginger; cook until fragrant.
  3. Transfer sautéed mixture to a slow cooker. Add beef cubes, spices, crushed tomatoes, coconut milk, tomato paste, brown sugar, lime juice, salt, and pepper.
  4. Cover and cook on low for 6–8 hours until beef is tender.
  5. Taste and adjust seasoning if necessary before serving hot over rice or with naan.
