  • 2 lbs beef chuck, cut into 1-inch cubes
  • 1 tbsp coconut oil
  • 1 large onion, finely chopped
  • 4 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp curry powder
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • ½ tsp cayenne pepper (optional)
  • 1 can (14 oz) diced tomatoes
  • 1 can (14 oz) full-fat coconut milk
  • 1 tbsp tomato paste
  • Salt and pepper to taste

Instructions

  1. In a large skillet over medium heat, melt the coconut oil. Add the chopped onion and cook until translucent, about 5 minutes.
  2. Stir in minced garlic and grated ginger; cook until fragrant.
  3. Add curry powder, turmeric, cumin, and optional cayenne pepper to the skillet and cook for another minute to enhance the flavors.
  4. Transfer the mixture to your slow cooker and add beef chunks, diced tomatoes, coconut milk, tomato paste, salt, and pepper. Stir well to combine.
