  • 2 tablespoons olive oil
  • 1 large yellow onion, chopped
  • 4 garlic cloves, minced
  • 2 carrots, sliced into thick rounds
  • 2 celery stalks, sliced
  • 1 red bell pepper, chopped
  • 1 tablespoon tomato paste
  • 1 can (14 oz) crushed tomatoes
  • 1 cup dry apple vinegar
  • 1 cup beef stock
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a Dutch oven over medium heat, warm the olive oil and brown the beef cubes until seared on all sides. Remove and set aside.
  3. In the same pot, sauté the onion and garlic until translucent. Add carrots, celery, and bell pepper; cook for an additional five minutes.
  4. Stir in tomato paste and combine well before adding crushed tomatoes, apple vinegar, beef stock, oregano, and thyme.
  5. Return the browned beef to the pot and stir gently. Bring to a simmer.
  6. Cover and bake in the preheated oven for approximately three hours or until meat is fork-tender.
