  • 2 lbs beef chuck, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 can (14 oz) diced tomatoes
  • 1 cup beef broth
  • 1 tablespoon tomato paste
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. In a Dutch oven over medium-high heat, add olive oil. Once hot, brown the beef cubes in batches for about 5-7 minutes. Remove and set aside.
  3. In the same pot, sauté chopped onions, carrots, celery, and minced garlic until softened (about 5 minutes).
  4. Return the browned beef to the pot and stir in diced tomatoes, beef broth, tomato paste, rosemary, thyme, and oregano.
  5. Cover with the lid or aluminum foil and bake for about 2-3 hours or until the beef is tender.
  6. Let sit for a few minutes before serving.
