  • 1 lb ground beef (or lamb)
  • 2 cups crushed canned tomatoes
  • 1 white onion
  • 3 cloves garlic
  • Greek yogurt
  • Fresh dill
  • 2 tbsp olive oil (divided)
  • 1 tbsp salt (divided)
  • 1 tsp black pepper (divided)
  • 1 tbsp sumac
  • 1 tbsp Aleppo pepper
  • 2 tsp ground coriander
  • 1 bay leaf
  • 2 tbsp Turkish red pepper paste (or tomato paste)
  • Fresh mint (for garnish)
  • 1 lemon (juiced)

Instructions

  1. Preheat your oven to 400°F.
  2. Cut eggplants into large pieces, toss with olive oil, salt, and pepper; roast for about 30 minutes.
  3. In a skillet, sauté diced onion and minced garlic with olive oil until golden.
  4. Add ground beef; cook until browned. Stir in spices and crushed tomatoes; simmer for 20 minutes.
  5. Mix Greek yogurt with minced garlic, dill, and lemon juice.
  6. Layer roasted eggplant and meat sauce in a baking dish; pour yogurt sauce on top before serving.
