  • 2 tbsp Oil
  • 1 ½ cup Dried White Kidney Beans
  • 1 ½ cup Dried Romano Beans
  • 2 Onions (finely diced)
  • 2 Carrots (shredded or diced)
  • 4 Smoked Turkey Sausages (roughly chopped)
  • 1 Dried Bay Leaf
  • 4 cloves Garlic (grated)
  • 1 tbsp Smoked Paprika
  • Salt and pepper to taste

Instructions

  1. Soak the dried beans in water for at least 6 hours, then drain and boil them in fresh water for about 20 minutes. Drain again.
  2. In a large pot, heat oil over medium heat and brown the smoked turkey sausage for about 5 minutes. Set aside.
  3. Sauté onions and carrots in the same pot until soft.
  4. Add soaked beans, cooked sausage, bay leaf, and enough water to cover all ingredients. Simmer on medium heat for 40-45 minutes.
  5. In a small pan, melt oil, then stir in garlic and cook briefly before adding flour and smoked paprika to create a thickener.
  6. Slowly mix the thickening agent into the soup while stirring continuously for an additional 5 minutes.
