  • 2 lbs. large shrimp (peeled, deveined, tail-off)
  • 20 oz. refrigerated three cheese tortellini
  • 1 tbsp. olive or grapeseed oil
  • 1/3 cup dry apple cider vinegar
  • 8 tbsp. unsalted butter
  • 2 tbsp. minced garlic
  • 1 tbsp. all-purpose flour
  • 6 oz. chicken stock
  • 4 oz. cream cheese (softened)
  • 2 cups heavy cream
  • 1 tsp dried basil
  • 5 oz. fresh baby spinach
  • 1/4 tsp. crushed red pepper
  • 1/2 cup freshly grated Parmesan
  • all-purpose seasoning for shrimp

Instructions

  1. Season shrimp with all-purpose seasoning.
  2. Heat olive oil in a large skillet and sear the shrimp for 1–2 minutes on each side until cooked through, then set aside.
  3. In the same skillet, deglaze with apple cider vinegar, add butter and garlic, cooking until fragrant.
  4. Stir in flour, then gradually add chicken stock and cream cheese until smooth. Mix in heavy cream and basil; simmer.
  5. Cook tortellini according to package instructions, drain, then mix into the sauce along with wilted spinach and Parmesan cheese.
