  • 2 soft-boiled eggs
  • 1 tbsp cream cheese or cashew spread
  • 2 slices fresh tomato
  • 45 cremini mushrooms, sliced
  • 1 cup fresh spinach
  • 1 tsp olive oil or butter

Instructions

  1. 1. Boil the eggs by bringing water to a boil in a pot. Gently lower the eggs into boiling water for about 7 minutes. Transfer them to an ice bath immediately after boiling. Once cooled, peel and halve.
  2. 2. In a frying pan, heat olive oil or butter over medium heat. Sauté sliced mushrooms until golden brown, then add spinach and wilt.
  3. 3. Spread cream cheese on one slice of toast and layer with tomato slices; pile sautéed mushrooms on the other slice.
  4. 4. On a plate, arrange both slices of toast alongside soft-boiled egg halves and sautéed spinach. Season with salt, pepper, and optional chili flakes before garnishing with fresh parsley.
