  • 1 tablespoon olive oil
  • 1 yellow onion (diced)
  • 1 red bell pepper (diced)
  • 2 stalks celery (diced)
  • Salt and pepper (to taste)
  • 12 teaspoons fresh thyme (or dried)
  • 3 cloves garlic (minced)
  • 1 lb chicken or turkey sausage
  • 2 cups torn curly kale
  • ¾ cup grated parmesan cheese

Instructions

  1. Preheat the oven to 400°F. Line a baking sheet with parchment paper.
  2. Prepare the squash by cutting off small pieces from the top and bottom for stability, then slice in half width-wise and scoop out the seeds.
  3. Roast the squash halves on the baking sheet, cut side down, brushed with olive oil for about 25 minutes until fork-tender.
  4. In a skillet over medium heat, warm olive oil, then sauté onion, bell pepper, and celery until softened.
  5. Add thyme, garlic, and sausage; cook until fully browned.
  6. Stir in kale until wilted and mix in half the parmesan cheese.
  7. Fill each roasted squash half with the sausage mixture and top with remaining cheese.
  8. Broil for 2-3 minutes until cheese is bubbly.
