  • 3 carrots, sliced
  • 3 celery stalks, chopped
  • 3 medium potatoes, diced
  • 1 tbsp tomato paste
  • 4 cups beef broth
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 2 bay leaves
  • Salt and black pepper, to taste
  • 2 tbsp all-purpose flour (optional, for thickening)
  • Crusty bread bowls

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sear beef cubes until browned on all sides, then set aside.
  2. In the same pot, sauté onion and garlic until softened. Add carrots and celery; cook for an additional 5 minutes.
  3. Return seared beef to the pot with diced potatoes, tomato paste, and beef broth. Stir in herbs and seasonings.
  4. Bring to a boil, then reduce heat to low and cover. Simmer for about 1.5 hours until beef is tender.
  5. For a thicker stew, mix flour with water to create a slurry and stir into the stew during the last few minutes of cooking.
  6. Hollow out crusty bread loaves to create bowls and ladle in the hot stew before serving.
