  • 1 fresh rosemary sprig
  • 1 tsp olive oil or butter
  • Salt & black pepper to taste
  • 1 cup mashed potatoes (prepared with butter and milk or cream)
  • 1 handful fresh spinach
  • 56 cherry tomatoes, halved
  • cucumber, sliced
  • Optional: olive oil and lemon juice for dressing

Instructions

  1. Cook the Salmon: Season the salmon fillet with salt and pepper. Heat olive oil in a skillet over medium heat, adding the rosemary sprig for infusion. Sear the salmon for 3–4 minutes on each side until golden brown.
  2. Prepare the Potatoes: Boil water and cook potatoes until tender. Drain, return to pot, then mash with butter, salt, and milk or cream until smooth.
  3. Build the Salad: In a bowl, mix fresh spinach, cucumber slices, and halved cherry tomatoes. Drizzle with olive oil and lemon juice if desired.
  4. Plate: Serve mashed potatoes topped with salmon garnished with rosemary alongside your colorful salad.
