Ingredients

  • 3 white onions
  • 5 cloves of garlic
  • 3 mixed peppers
  • 500 g sweet potatoes
  • 6 salad tomatoes
  • 500 g large carrots
  • 5 sprigs of fresh rosemary
  • 100 ml single cream
  • 800 ml vegetable stock
  • 4 tbsp extra virgin olive oil
  • Salt
  • Pepper
  • 1 tsp dried sage
  • 2 tsp Italian herb

Instructions

  1. Preheat your oven to 200°C (390°F).
  2. Combine chopped vegetables in a bowl with olive oil, salt, pepper, sage, and herbs.
  3. Spread on a baking tray and roast for 30–35 minutes until tender and caramelized.
  4. Blend the roasted veggies with vegetable stock and cream until smooth.
  5. Heat through in a pot before serving.
