  • 3 medium-sized tomatoes
  • 2 habanero peppers (or more for added heat)
  • 1 red bell pepper
  • 2 jalapeno peppers
  • 1 medium-sized mango (peeled and chopped)
  • Juice from 1 lime
  • 3 tablespoons fresh chopped cilantro
  • 1 teaspoon olive oil
  • Salt to taste

Instructions

  1. Preheat the oven to broil.
  2. Halve the tomatoes and place them cut-side up on a lightly oiled baking sheet. Halve the habaneros and jalapenos, and quarter the red bell pepper before adding them to the baking sheet.
  3. Broil vegetables for about 15 minutes, monitoring closely to prevent burning.
  4. In a sauté pan over medium heat, add olive oil and chopped mango; sauté until slightly browned (6-8 minutes).
  5. Continue broiling tomatoes for another 5-10 minutes until skins loosen. Allow all ingredients to cool slightly.
  6. In a food processor, blend peeled tomatoes, jalapenos, bell pepper, roasted habaneros, sautéed mango, lime juice, cilantro, and salt until smooth.
  7. Chill in the refrigerator for at least 4 hours before serving or enjoy immediately.
