  • 3 lb bone-in lamb shoulder
  • Salt & freshly ground black pepper
  • 1/4 cup honey
  • 3 tbsp soy sauce or Worcestershire sauce
  • 4 cloves garlic, minced + 8 cloves whole garlic, peeled

Instructions

  1. 1. Preheat oven to 325°F (163°C).
  2. 2. Season the lamb shoulder generously with salt and pepper.
  3. 3. In a bowl, mix honey, soy sauce (or Worcestershire sauce), and minced garlic to create the glaze.
  4. 4. Place the seasoned lamb in a roasting pan and pour half of the glaze over it; reserve the other half for basting.
  5. 5. Insert a meat thermometer into the thickest part of the lamb and roast for about 2-2.5 hours until it reaches an internal temperature of 145°F (63°C), basting every 30 minutes.
  6. 6. Let rest for at least 15 minutes before slicing and serving.
