  • 1/2 cup pitted medjool dates, finely chopped
  • 1 medium fresh mandarin orange, sliced
  • 1/4 cup shelled pistachios, roughly chopped
  • 2 tablespoons lemon juice
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons freshly chopped flat-leaf parsley
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon ground black pepper

Instructions

  1. In a mixing bowl, whisk together olive oil, lemon juice, sea salt, and ground black pepper.
  2. Wash and thinly slice the celery stalks. Finely chop the medjool dates. Slice the mandarin orange into rounds.
  3. In a large mixing bowl, combine sliced celery, chopped dates, parsley, mandarin slices, and pistachios. Pour in the dressing and toss gently to combine.
  4. Serve immediately or refrigerate for about 30 minutes to enhance flavors.
