  • 1 sheet of puff pastry
  • 250 ml milk
  • 20 g cornstarch
  • 2 egg yolks
  • 50 g sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon butter
  • Fresh or frozen raspberries

Instructions

  1. Preheat the oven to 190 degrees Celsius.
  2. In a saucepan, whisk together milk, cornstarch, egg yolks, sugar, and vanilla extract. Heat over medium heat until thickened.
  3. Remove from heat and stir in butter until melted. Allow to cool slightly.
  4. Roll out puff pastry and cut into eight rectangles.
  5. Place custard in the center of each rectangle and top with raspberries.
  6. Fold over the pastry to encase the filling and seal the edges securely.
  7. Brush the tops with an egg wash (whisked egg yolk mixed with milk).
  8. Bake on a parchment-lined baking sheet for 15-20 minutes until golden brown.
  9. Dust with powdered sugar before serving.
