  • 2 cups whole dried Sichuan red chilies (or 1.5 cups Sichuan/Korean chili flakes)
  • 3 cloves garlic (finely minced)
  • 4 slices ginger
  • 1 small onion (quartered)
  • 4 star anise
  • 2 bay leaves
  • 1 cinnamon stick
  • 5 cloves
  • 2 1/2 cups vegetable oil
  • 1/4 tsp Sichuan pepper powder
  • 3 tsp salt

Instructions

  1. In a food processor, grind dried chilies into fine flakes. Transfer to a heat-proof bowl and mix with minced garlic and salt.
  2. Heat vegetable oil in a large pot on low-medium until it reaches around 250°F. Add ginger, onion, and aromatics; simmer for 20-25 minutes.
  3. Remove aromatics from the oil and pour hot oil into the bowl with chili flakes. Stir gently to combine.
  4. Let cool completely before transferring to a sterilized jar for storage.
