Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine graham cracker crumbs, sugar, and melted butter in a mixing bowl. Press mixture into the bottom of a greased 9×13 inch baking pan.
  3. Bake crust for about 10 minutes until lightly golden.
  4. In a separate bowl, beat softened cream cheese until smooth. Gradually add sugar and mix well.
  5. Add eggs one at a time, ensuring thorough mixing after each addition. Incorporate pumpkin puree, vanilla extract, and pumpkin pie spice until fully combined.
  6. Pour cheesecake filling over the pre-baked crust and bake for 30–40 minutes until set around edges but slightly jiggly in the center.
  7. Cool at room temperature then refrigerate for at least 4 hours before serving.
