  • 2 cups whole milk
  • 4 eggs (yolks separated from whites)
  • 1 1/2 cups confectioner’s sugar
  • 1 tsp vanilla extract
  • 1 cup pumpkin puree
  • 1 cup all-purpose flour
  • Pinch of cream of tartar
  • 1 tsp ground cinnamon
  • 1 tsp pumpkin pie spice

Instructions

  1. Preheat your oven to 325°F (163°C). Prepare an 8×8 or 9×9 inch baking dish by lining it with parchment paper.
  2. Warm the milk until lukewarm and set aside.
  3. Beat egg whites with a pinch of cream of tartar until stiff peaks form.
  4. Melt the butter and allow it to cool slightly.
  5. In another bowl, beat egg yolks with confectioner’s sugar, then mix in vanilla extract, cinnamon, pumpkin pie spice, and melted butter.
  6. Gradually add flour and pumpkin puree along with a portion of lukewarm milk.
  7. Mix until smooth, then slowly incorporate the remaining milk.
  8. Gently fold in beaten egg whites without deflating them.
  9. Pour batter into the prepared dish and bake for 60-65 minutes until golden brown.
  10. Cool completely before slicing and serve chilled or at room temperature.
