  • 8 ounces block-style cream cheese (softened but still cool)
  • 1/4 cup unsalted butter (softened but still cool)
  • 1 teaspoon pure vanilla extract
  • 1 3/4 cups confectioners’ sugar (sifted)

Instructions

  1. Preheat oven to 350°F and line a baking sheet with parchment paper.
  2. Whisk together flour, baking powder, baking soda, salt, and pumpkin pie spice in a bowl.
  3. In a mixer, cream together butter, granulated sugar, and brown sugar until fluffy. Add pumpkin puree, egg, and vanilla; mix well.
  4. Gradually combine dry ingredients with the wet mixture until just incorporated.
  5. Scoop dough onto prepared baking sheet, spacing them apart.
  6. Bake for 13-15 minutes until edges are set but cookies are still soft.
  7. Cool cookies on wire rack.
