  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon fine sea salt
  • 1 stick (113 grams) unsalted butter (at cool room temperature)
  • 1/4 cup (50 grams) packed light brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon fine sea salt
  • 1 1/2 cups (188 grams) powdered sugar (sifted)
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon milk (plus more if needed)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a mixing bowl, cream together softened butter and light brown sugar until smooth. Add the egg and vanilla extract, then mix in the pumpkin puree until well combined.
  3. In another bowl, whisk together flour, cinnamon, ginger, nutmeg, baking soda, and salt. Gradually add this dry mixture to the wet ingredients until just combined.
  4. Pour the batter into your prepared pan and bake for approximately 25 minutes or until a toothpick comes out clean.
  5. For the frosting, beat together softened butter and light brown sugar in a medium bowl. Mix in cinnamon and salt before gradually adding powdered sugar alternating with milk until you reach your desired consistency.
  6. Once cooled completely, frost the bars and cut them into squares before serving.
