  • 200g lean ground beef or turkey
  • 1 medium sweet potato, diced
  • 1 ripe avocado, sliced
  • 1 tbsp olive oil
  • 1 tbsp tomato paste
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • Salt & pepper to taste
  • 1 tsp olive oil, for roasting

Instructions

  1. Preheat your oven to 400F (200C). Toss diced sweet potatoes with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until tender.
  2. In a skillet over medium heat, add olive oil. Brown the ground meat, then incorporate tomato paste, cumin, smoked paprika, salt, and pepper. Simmer for 2-3 minutes.
  3. In a serving bowl, layer cooked ground meat first, followed by roasted sweet potatoes and slices of avocado. Garnish with optional fresh herbs.
