  • 1 medium onion (diced)
  • 1 (14 oz) can fire-roasted tomatoes
  • 3 garlic cloves (minced)
  • 2 small carrots (peeled and diced)
  • 1 medium potato (peeled and diced)
  • 1 tsp oregano (dried)
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • Red pepper flakes (to taste)
  • 2 cups vegetable broth
  • 2 (14 oz) cans pinto beans (drained and rinsed)
  • Salt and pepper

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add diced onion and sauté for 4-5 minutes until translucent.
  2. Stir in fire-roasted tomatoes, minced garlic, diced carrots, potato, and spices. Cook for 1-2 minutes until fragrant.
  3. Pour in vegetable broth and optional bay leaves; bring to a boil.
  4. Reduce heat to medium-low, cover, and simmer for about 10-15 minutes.
  5. Add drained pinto beans; cook for another 10 minutes until vegetables are tender.
  6. For a creamier texture, blend half of the soup with an immersion blender or transfer to a regular blender.
  7. Return blended soup to the pot, adjust seasoning as needed, and serve hot.
