  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 1 large egg or 1 tbsp ground flaxseed + 3 tbsp water
  • 1 tsp vanilla extract
  • 1 ¼ cups all-purpose flour
  • ½ tsp baking powder
  • ¼ tsp salt
  • ½ cup brown sugar
  • 2 tbsp melted butter
  • 1 small can pineapple rings, cut into smaller pieces or fresh pineapple
  • halved maraschino cherries or dried cranberries

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, cream together softened unsalted butter and granulated sugar until fluffy. Add egg (or flax egg) and vanilla extract; mix well.
  3. In another bowl, whisk together all-purpose flour, baking powder, and salt. Gradually add to wet ingredients until just combined.
  4. Stir in half of the brown sugar mixture.
  5. On the prepared baking sheet, sprinkle remaining brown sugar mixed with melted butter as the base; place pineapple pieces and cherries on top.
  6. Scoop rounded tablespoons of dough over each topping. Bake for 12–15 minutes or until edges are golden brown.
  7. Allow cooling before serving.
