  • 1 cup crushed pineapple, drained (reserve juice for glaze)
  • 1/2 cup sour cream (room temperature)
  • 1 1/2 cups powdered sugar
  • 23 tbsp reserved pineapple juice
  • Optional: 1 tbsp melted butter for richness
  • Optional: 1/4 tsp pineapple or vanilla extract for flavor boost

Instructions

  1. Preheat the oven to 325F (165C) and grease a Bundt or tube pan.
  2. Cream together softened butter and sugar until fluffy. Add eggs one at a time, mixing well.
  3. Stir in vanilla and optional pineapple extract. In another bowl, whisk flour, baking powder, and salt together.
  4. Gradually mix dry ingredients into the wet mixture alternating with sour cream, then fold in crushed pineapple.
  5. Pour batter into the prepared pan and bake for 75-85 minutes until a toothpick comes out clean.
  6. Cool for 15 minutes before transferring to a wire rack to cool completely.
  7. For the glaze, whisk powdered sugar with reserved pineapple juice until smooth and drizzle over cooled cake.
