  • 1/4 cup low-sodium soy sauce
  • 2 tbsp honey (or maple syrup)
  • 2 tbsp rice vinegar (or apple cider vinegar)
  • 1 tbsp sesame oil (or olive oil)
  • 1 tbsp grated fresh ginger
  • 2 cloves minced garlic
  • 1 cup fresh pineapple, diced
  • 1 medium red bell pepper, diced
  • 8 tortillas (corn or flour)
  • Optional toppings: sliced avocado, chopped cilantro, lime wedges

Instructions

  1. In a mixing bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, ginger, garlic, lime juice, and salt. Add the chicken breasts and marinate for at least 15 minutes.
  2. While the chicken marinates, chop the pineapple and vegetables.
  3. Heat olive oil in a skillet over medium-high heat. Remove chicken from marinade and cook for about 5–7 minutes on each side until fully cooked. Let rest before slicing.
