  • 4 boneless skinless chicken breast halves (4 ounces each)
  • 2 cans (8 ounces each) unsweetened pineapple chunks
  • 1 tablespoon honey
  • 1 tablespoon reduced-sodium teriyaki sauce or reduced-sodium soy sauce
  • 1 tablespoon canola oil
  • 1 tablespoon all-purpose flour
  • 1 teaspoon cornstarch
  • 1/8 teaspoon pepper
  • Hot cooked rice
  • Optional: Thinly sliced green onions and sesame seeds

Instructions

  1. Pound chicken breasts to 1/4-inch thickness; coat lightly with flour.
  2. Heat canola oil in a skillet over medium heat; brown chicken for 3-5 minutes on each side until cooked through.
  3. Drain pineapple chunks, reserving 1/4 cup juice. Combine cornstarch with reserved juice in a mixing bowl.
  4. Add honey, teriyaki sauce (or soy sauce), and pepper to the skillet; stir until thickened.
  5. Return chicken to the skillet with pineapple chunks; heat through for another minute or two.
  6. Serve hot over prepared rice.
