  • 3/4 cup pineapple juice (from the canned pineapple)
  • 3 tablespoons honey
  • 2 tablespoons soy sauce
  • 1 teaspoon rice vinegar (or apple cider vinegar)
  • 1 teaspoon grated fresh ginger
  • 2 cloves garlic (minced)
  • 1 tablespoon cornstarch
  • 1/2 red bell pepper (cut into bite-size pieces)
  • 1/2 medium onion (sliced or cut into bite-size pieces)

Instructions

  1. Combine the sauce ingredients in a small bowl and whisk until smooth.
  2. Chop the red bell pepper and onion into bite-sized pieces.
  3. Cut the chicken into 1-inch pieces, season with garlic powder and pepper, then coat with cornstarch.
  4. Heat olive oil in a large skillet over medium-high heat and cook chicken in batches until browned (about 4 minutes per side).
  5. If needed, add a splash of olive oil to the pan, then add pineapple and cook undisturbed for one minute.
  6. Stir in the chopped vegetables and cook until tender-crisp (about 3 minutes).
