  • 2 tbsp olive or sesame oil
  • 2 cloves garlic, minced
  • ½ cup soy sauce
  • â…“ cup pineapple juice
  • 2 tbsp honey or brown sugar
  • 1 tbsp rice vinegar or apple cider vinegar
  • 1 tsp cornstarch + 1 tbsp water
  • 1½ cups cooked rice
  • 1 cup pineapple chunks
  • ½ red bell pepper, diced
  • ¼ cup green onions, chopped

Instructions

  1. Heat oil in a non-stick skillet over medium-high heat. Sauté cubed chicken until browned and set aside.
  2. In the same pan, sauté minced garlic until fragrant. Add soy sauce, pineapple juice, honey (or brown sugar), and vinegar; simmer for a few minutes.
  3. Mix cornstarch with water and add to the sauce, cooking until glossy and slightly thickened.
