  • 3 cups grated carrots
  • 3/4 cup chopped walnuts
  • 1/2 cup raisins (optional)
  • 1 (8-ounce) package brick style cream cheese (softened to room temperature)
  • 1/2 cup unsalted butter (softened to room temperature)
  • 2 cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, whisk together flour, baking powder, baking soda, ground cinnamon, ground ginger, ground nutmeg, and salt.
  3. In another bowl, mix together canola oil, brown sugar, and granulated sugar. Add eggs one at a time while mixing. Stir in crushed pineapple and vanilla extract until smooth.
  4. Gradually add dry ingredients into the wet mixture. Fold in grated carrots and chopped walnuts until just combined.
  5. Pour batter into the greased baking pan. Bake for about 40 minutes or until a toothpick inserted in the center comes out clean. Let cool completely before frosting.
  6. In a bowl, beat together softened cream cheese and butter until creamy. Gradually add powdered sugar and vanilla extract. Mix until smooth.
