  • 1 pound sirloin steak, thinly sliced
  • 8 cups beef broth
  • 1 (14.5 ounce) can diced tomatoes
  • 4 tablespoons butter
  • 4 tablespoons all-purpose flour
  • 3 cups milk
  • 8 ounces cream cheese, softened
  • 8 ounces shredded provolone cheese
  • Salt and freshly ground black pepper to taste
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onion and bell peppers until softened (about 8-10 minutes).
  2. Add thinly sliced sirloin and brown it by cooking over medium-high heat.
