  • 1 cup (226g) melted butter
  • 1 cup (220g) packed light brown sugar
  • 1/2 cup (95g) granulated sugar
  • 2 large eggs
  • 1 tablespoon (15ml) pure vanilla extract
  • 1 ½ cups (210g) all-purpose flour
  • 1 cup (110g) Hershey’s Special Dark Cocoa powder
  • 1 teaspoon salt (5g)
  • 1 teaspoon (4g) baking soda
  • 1 bag (12oz/340g) semi-sweet chocolate chips
  • 6 tablespoons (85g) unsalted butter, at room temperature
  • 1 cup (264g) creamy peanut butter
  • 1 ½2 cups (195g260g) powdered sugar, sifted
  • 1 teaspoon (5ml) pure vanilla extract
  • 1 bag (12oz/340g) dark chocolate chips
  • ¾ cup (177ml) heavy whipping cream

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a mixing bowl, combine melted butter, light brown sugar, granulated sugar, eggs, and vanilla extract. Beat until well blended.
  3. In another bowl, whisk together flour, cocoa powder, salt, and baking soda; gradually add to the wet mixture. Stir in semi-sweet chocolate chips.
  4. Drop rounded tablespoons of dough onto prepared sheets and bake for about 10 minutes until edges are firm but centers remain soft. Cool on racks.
  5. For the filling, cream together unsalted butter and peanut butter; gradually add sifted powdered sugar and vanilla until smooth.
  6. Spread peanut butter filling over cooled cookies.
  7. To make the ganache, heat heavy cream until hot but not boiling; pour over dark chocolate chips in a bowl and stir until smooth.
  8. Drizzle or spread ganache over each cookie topped with peanut butter filling.
