  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter (softened)
  • 3/4 cup light brown sugar
  • 1/2 cup creamy peanut butter
  • 2 large eggs
  • 1/2 teaspoon vanilla extract
  • 1/4 cup sour cream
  • 1 1/2 cups mashed banana (about 3 or 4 medium overripe bananas)
  • Optional: 1/2 to 2/3 cups chopped nuts

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9" x 5" loaf pan.
  2. In a mixing bowl, whisk together the flour, cinnamon, baking powder, baking soda, and salt.
  3. In another bowl, cream together the softened butter, brown sugar, and peanut butter using an electric mixer until fluffy.
  4. Add eggs one at a time and mix well after each addition. Stir in vanilla extract.
  5. Gradually add the dry ingredients alternately with sour cream, mixing on low speed until just combined.
  6. Gently fold in the mashed bananas and nuts if using.
  7. Pour the batter into the prepared loaf pan and bake for about 50 to 55 minutes or until a toothpick inserted comes out clean.
  8. Let it cool in the pan for about ten minutes before transferring it to a wire rack to cool completely.
