  • 1 Tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, cubed and cold
  • 1 egg
  • 1/4 cup heavy whipping cream
  • 1/4 cup sour cream
  • 2 tsp vanilla extract
  • 1/2 cup fresh peaches, diced
  • For the Vanilla Glaze: 1/2 cup powdered sugar
  • 2 tsp vanilla extract
  • 13 Tbsp heavy whipping cream

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine flour, brown sugar, baking powder, and salt. Whisk together until blended.
  3. Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
  4. In another bowl, whisk together egg, heavy cream, sour cream, and vanilla extract. Add this to the dry ingredients and mix until just combined.
  5. Gently fold in diced peaches.
  6. Turn dough onto a floured surface; shape into a circle about 1 inch thick and cut into wedges. Place on the baking sheet and brush tops with heavy cream.
  7. Bake for about 16 minutes or until golden brown.
  8. For the glaze, whisk together powdered sugar, vanilla extract, and enough heavy cream to reach drizzling consistency. Drizzle over slightly cooled scones before serving.
