  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk (or almond milk)
  • 1 large egg
  • 2 tablespoons melted butter (or coconut oil)
  • 2 cups fresh peaches, sliced
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice
  • 1 tablespoon butter

Instructions

  1. Prepare the peach topping by melting butter in a saucepan over medium heat. Add sliced peaches, brown sugar, cinnamon, and lemon juice. Cook until peaches are tender (about 5-7 minutes), stirring occasionally.
