Ingredients

Scale
  • 4 overly ripe bananas
  • 2 eggs (room temperature)
  • 1/2 cup butter (room temperature)
  • 1 cup granulated sugar
  • 2 1/4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 1/2 cups chopped pecans

Instructions

  1. Preheat your oven to 325°F (165°C) and prepare a loaf pan by greasing it or lining it with parchment paper.
  2. In a medium bowl, whisk together the flour, sugar, salt, baking powder, and baking soda until evenly combined.
  3. In a separate bowl, mash the bananas until smooth. Add butter and eggs, mixing gently until just combined.
  4. Fold the dry ingredients into the wet mixture until just combined; some lumps are okay.
  5. Gently fold in the chopped pecans.
  6. Pour the batter into the prepared loaf pan and spread evenly.
  7. Bake for 40-45 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
