  • 3 tablespoons olive oil
  • 1 pound ground beef
  • 1 onion (diced)
  • 2 carrots (diced)
  • 2 stalks celery (diced)
  • 5 cloves garlic (minced)
  • 3 cups tomato sauce
  • 4 cups chicken stock
  • 15 ounces fire-roasted tomatoes
  • 1 tablespoon Italian seasoning
  • 1 cup dry ditalini pasta
  • 15 ounces red kidney beans (drained and rinsed)
  • 15 ounces cannellini beans (drained and rinsed)
  • Salt and pepper to taste

Instructions

  1. Heat 1 tablespoon of olive oil in a large dutch oven over medium-high heat. Add ground beef, cooking until browned. Remove and drain excess fat.
  2. In the same pot, add remaining olive oil and sauté onions, carrots, and celery until softened.
  3. Stir in minced garlic for an additional 30 seconds until fragrant.
  4. Pour in chicken stock, tomato sauce, fire-roasted tomatoes, Italian seasoning, cooked beef, and ditalini pasta. Stir well.
  5. Bring to a boil, then reduce heat to simmer covered for about 15 minutes until pasta is cooked.
  6. Add kidney beans and cannellini beans; cook for a few more minutes until heated through.
  7. Season with salt and pepper before serving.
