  • 2 celery stalks (chopped)
  • 6 cups chicken or vegetable broth
  • 1 can kidney beans (drained)
  • 1 can cannellini beans (drained)
  • 1 can tomato sauce (8 oz.)
  • 1 can diced tomatoes (28 oz.)
  • 2 tsp dried oregano
  • 2 tbsp dried parsley
  • 1 tsp dried basil
  • 1/2 tsp dried thyme
  • 2 tsp salt
  • 1 tsp black pepper
  • 4 cups water
  • 12 cups dry pasta (uncooked)

Instructions

  1. Heat the oil in a large stock pot over medium heat.
  2. Sauté the onion, garlic, carrots, and celery until softened.
  3. Add the broth, tomato sauce, diced tomatoes, beans, and spices; stir well.
  4. Bring to a boil, then reduce heat and let simmer for about 15 minutes.
  5. Stir in the uncooked pasta and cook for an additional 10-12 minutes until tender.
