  • 2 lbs red potatoes (washed)
  • 1 stick butter (1/2 cup)
  • 1/3 cup grated Parmesan cheese
  • 3 tablespoons herb seasoning (divided)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Nonstick cooking spray

Instructions

  1. Preheat oven to 400°F (200°C) with the butter in a 9×13 baking pan until melted.
  2. Cut potatoes in half and score each half for better flavor absorption.
  3. In a bowl, mix Parmesan cheese with 2 tablespoons of herb seasoning, salt, and pepper.
  4. Sprinkle the seasoning mixture in the bottom of the pan, then place potatoes cut side down on top.
  5. Spray tops with nonstick cooking spray and sprinkle remaining herb seasoning.
  6. Bake uncovered for about 40 minutes until tender when pierced with a fork.
