  • ½ lb lean ground beef
  • 1 tsp olive oil
  • ½ cup yellow onion, chopped
  • 3 garlic cloves, minced
  • 3 tbsp tomato paste
  • 1 jar (24 oz) red pasta sauce or marinara
  • 7 cups beef or chicken broth
  • 910 uncooked lasagna noodles, broken into pieces
  • 3 cups fresh baby spinach
  • ½ cup shredded Parmesan
  • 1 cup fresh ricotta
  • 1 cup shredded mozzarella

Instructions

  1. In a large Dutch oven, heat olive oil over medium-high heat. Brown the lean ground beef for about 8–10 minutes, then drain excess grease.
  2. Add chopped onion to the pot and sauté for about five minutes before stirring in minced garlic.
  3. Mix in tomato paste and cook for an additional minute. Then add red pasta sauce and broth; bring to a simmer.
  4. Stir in broken lasagna noodles and cover. Simmer for about twenty minutes until noodles are tender.
  5. Add fresh spinach and stir until wilted. Finish by mixing in grated Parmesan cheese and serving topped with dollops of ricotta and mozzarella.
