2 cups chopped mixed bell peppers
1 large zucchini, sliced
1 red onion, sliced
1 cup cherry tomatoes
1/2 cup Kalamata olives
3 tbsp olive oil
1 tbsp dried oregano
1 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
Instructions
Preheat your oven to 400°F (200°C).
In a large bowl, combine bell peppers, zucchini, red onion, cherry tomatoes, and Kalamata olives. Drizzle with olive oil and add oregano, garlic powder, salt, and black pepper. Mix until evenly coated.
Spread the vegetable mixture on a baking sheet in a single layer.
