  • 2 large chicken breasts
  • 500g baby potatoes, halved
  • 300g fresh green beans, trimmed
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 1 tsp dried rosemary
  • Salt & pepper to taste

Instructions

  1. Preheat your oven to 200C (400F).
  2. In a mixing bowl, toss halved baby potatoes with olive oil, dried rosemary, salt, and pepper. Spread on one side of a baking dish.
  3. Season chicken breasts in another bowl with olive oil, garlic powder, paprika, dried oregano, salt, and pepper until well coated. Place in the center of the baking dish.
  4. Bake for 20 minutes.
  5. Add trimmed green beans tossed in olive oil, salt, and pepper to the baking dish. Return to oven for an additional 20 minutes.
  6. Ensure chicken reaches an internal temperature of at least 75C (165F) before serving.
