  • 1 can (28 oz) San Marzano whole peeled tomatoes
  • 48 oz chicken broth
  • 2 cans (14.5 oz each) cannellini beans
  • 4 oz diced turkey slices
  • 1 medium yellow onion, diced
  • 3 garlic cloves, minced
  • 1 lb ditalini pasta

Instructions

  1. Boil salted water in a large pot and cook ditalini pasta according to package instructions until al dente (6-7 minutes). Drain and set aside.
  2. In the same pot, heat olive oil over medium heat. Sauté diced onion until translucent, then add minced garlic and sauté for an additional minute.
  3. Stir in turkey slices and cook until slightly browned (about 5 minutes).
  4. Add cannellini beans with their juice and bring to a low boil while stirring.
  5. Process the tomatoes in a food processor until chunky, then add to the pot along with chicken broth. Bring to a boil again.
  6. Season with ground pepper as desired, reduce heat to low, and simmer for about 15 minutes.
  7. Serve hot with optional grated cheese and crusty bread.
